I want to share a recipe for homemade bread kvass. This is our old family recipe. What could be better than vigorous kvass in the summer heat - and you can quench your thirst and make okroshka.
You can prepare a drink with yeast, but the taste is different. I'm making a real brew on sourdough from rye flour. Why bread, because it is used for baking rye bread.


per 4 liters
3.5 liters of boiled water
8-10 rye bread slices
3 tablespoons sugar
1 tsp raisins
1 tbsp yeast or
1/2 tsp dry yeast

Day 1 - 30 g of rye flour + 30 g water
2 day - half throw and add 30 g of rye flour + 30 g water
3 day - half throw and add 30 g of rye flour + 30 g water
4 day - half throw and add 30 g + rye flour 30 g water
5 day - half to throw, and add 30 g of rye flour + 30 g of water
day 6 - can be used, but the best 7 days.

I do kvass in 4 liter jar to receive the output of about 3 liters (two 1.5 L bottles).
Fill the jar half of the water.
It may be warm, but not hot.
Add to sugar, raisins and leaven.
All good stir.
Add the bread and pour the remaining water, jar, not reaching the top 4-5 cm.
When the brew will play, bread will rise.
Availability: in warm weather - 2 days, in the cold - a maximum of 3 days.
All the bread should not fall to the bottom, if fell - kvass prokis.

Prepare homemade kvass

Ready brew strain through 2-3 layers of cheesecloth.
Add sugar to taste, 1 tablespoon is enough for me per liter.
Put the brew in the fridge for a day to mature.
Separate the remaining half of bread for the next batch.
The second half to throw and to wash the jar.
Start all over again, knead the remaining bread.
And you are always with kvass!
