This- my first cheesecake in life that you want to bake (before I cook cheesecakes, which are cooled)
What was the kick for the preparation of the classical version of cheesecake? The appearance of the cheese "kremchiz" in Belarus. Moreover, the manufacturer, I trust - TM "Bonfesto". I am happy to use them mascarpone, ricotta and mozzarella. Very pleased.

While "kremchiz" sold in white cans with only enterprise logo and product description. Branded packaging until approved. So - look in cheeses large banks (0.5 kg) white without any rigmarole. The taste is slightly salty, sweet, creamy consistency. Reminds Philadelphia (although, due to the long absence we have to sell this Philadelphia, memories of the taste a little "dim")

Citrus cheesecake.

Prepare a diameter of 22-24 cm (split) foil and baking paper.


  • biscuits (shortbread) - 200 g
  • butter (soft) - 80 g
  • Powdered cinnamon - 1 teaspoon
  • kremchiz (or any soft cream cheese) - 500 g
  • tangerine puree - 80g
  • Eggs - 3 pcs
  • fine sugar or powdered sugar - 100 g
  • spicy oranges
  • oranges - 2 pcs
  • sugar - 80 g
  • seasoning for mulled - 1 pack (eg Santa Maria).
  • limoncello - 25 g


Preheat oven to 180 degrees.

Grind in a mortar or food processor to a state of fine pastry crumbs, add the cinnamon, soft butter and mix until smooth.
Collect form a cake, crumbs at the bottom and pour well compacted evenly.
Beat cheese with sugar (at low speed mixer). Mix the eggs with tangerine sauce and carefully, in small portions to add the cheese, stirring gently every time. Mass not whisk and stir, or baking it will rise like a souffle, and then may crack.

Form wrap (bottom and sides) in the two foil layers. The deep pan pour water, so that it reaches the level of 2/3 form. Foil, we need to ensure that the water in baking does not enter the mold.

Pour the cheese filling on the cake, level.
Bake 60 minutes. Then, slightly opens the oven door (you can just lay fork or spoon) and leave the cheesecake off the oven to cool.

Prepare oranges for decoration.
Oranges cut into round slices of three to four millimeters thick.
In saucepan pour sugar, pour 100 ml of water, add spices to mulled and bring to a boil. Cook three minutes, add limoncello, orange slices and boil at low heat for thirty minutes (until boiling syrup). Put the orange slices on a paper towel (to excess moisture is gone)

The cooled cheesecake demoulded - to hold a knife between the mold wall and cheesecake and uncover shape.
Decorate with orange slices.
